A long weekend away





We spent a wonderful weekend in Pismo Beach - on the central California coast. It rained like the end of the world at night but the days were sunny and perfect. There were a lot of people but it wasn't crowded at all. The drive down the Pacific Coast Highway was beautiful!























Last night I made pasta with a vodka cream sauce. It was simple and good. I used soy milk for the cream and no-chicken broth for the chicken broth. Planning meals for these evenings where one kid is at rehearsals for 4 hours and the other is at lacrosse for 2 1/2 hours is getting difficult! We've always made a point of eating together as a family but we seem to always be missing someone these days...

I love basic tomato-based pasta sauces. Pasta is so versatile and 'feel-good'! Love all those pizzas in your earlier post too - fabulous! How is the tofu feta? I haven't seen it here in Canada.

Thanks Dreena - I make my own tofu feta. I've tried countless recipes but they all make such a huge amount and they aren't quite what I'm looking for. The easiest is to take firm tofu and crumble it. Sprinkle it with salt, nutritional yeast and a tiny bit of lemon juice. You can make however much you need this way and works great on a salad or in spanikopita.

Thanks Nancy, I've seen a new line of vegan cheeses in the US that includes a tofu feta, so I thought that might be what you were using. Also, the lavosh sandwiches above look great... do you make your own bread as well, or was it premade? Nice blog you have...!
