Taco Salad

We had sun today! I got out in the backyard and did some pruning and as I had it all bundled in my hand decided it was too pretty to go in the recycling bin:

When I was planning dinners for this week I realized what a hectic schedule we had for the next few days. So we're having some very simple standards this week :-)

Tonight we had taco salad - everyone makes their own:

Romaine lettuce, chopped
1 can each pinto beans, black beans and kidney beans (NOT drained) mixed with one packet of taco seasoning or homemade taco mix and heated
Follow Your Heart cheddar cheese
soy sour cream
sliced black olives
diced red onion
tortilla chips - broken up

I like this dinner because everyone can customize it to their own taste - mine was spicy HOT!

I love that it's taco night at your house! I'm thinking about doing it at mine. Have you done tvp tacos before? I've done yves and lightlife crumbles but I don't want to buy/eat those much more.

Hey Jess - I've made TVP tacos many times - I use one cup to 7/8 cup liquid mixed with taco seasoning. I usually make it in advance and then when we're ready to eat it I saute it for a few minutes to get it browned. It tastes better if it sits for awhile but it makes great tacos!

Great taco night pictures! My family also enjoys baked potato bar night, which we usually have a make you own salad with it also.

Jess, I have also made tvp taco burgers, my family enjoys this.

My favorite now is using seasoned lentils for taco meat after I found the idea in a magazine not long ago - they went over very well. If you're intereted stop by my blog and I'll dig out the recipe and post it... that is because I'm hankering a taco night soon myself.

thank for the tips! I'm trying to work tvp into taco dinners as opposed to yves crumbles (my boyfriend's preference)..tvp is so much cheaper and done at home, two wonderful qualities.
Tempeh tacos are on my to-do list as well.
