
The recipe I used for these waffles is a veganized version of the recipe that came with the waffle iron for "Quick Waffles" - this make a big batch and they are fluffy and not sweet - you could add more sugar if you like sweet waffles.
3 T. Ener-G egg replacer
2/3 cup water
3 cups soy milk
2 sticks Earth Balance margarine, melted
2 T. vanilla
4 cups flour
1 tsp salt
2 T. baking powder
2 T. sugar
Mix the egg replacer and water together until well blended. Add in margarine, soy milk and vanilla. Combine the dry ingredients together and mix well with the "egg" mixture. Today I ended up needing to add more liquid (I added a little bit more soy milk and then water). It's pretty flexible!

Just like my waffle iron : ) I just posted my nut waffle recipe last week on my blog and had pictures of my heart shaped waffles. Guess we were on the same wave length !
