What's for dinner?















We've been gone since Sunday - it was spring break and we spent the week down in Laguna Beach. We saw a little bit of sun but a lot of rain. I know I'm repeating myself but I'm so tired of the rain!

We found some good restaurants - Indian, Thai, Mongolian BBQ - where we were able to get good vegan food. Driving home tonight one of the girls said "mom, what's for dinner?" Argh. There was nothing in the house and I really didn't feel like one more meal out. So I rummaged through the freezer and pantry and we put together the sweet and sour "meatballs" mentioned awhile back at veganlunchbox. I had two packages of the frozen organic basmati rice that Trader Joe's sells. I doubled the sauce (grape jelly and chili sauce) and we had the meatless meatballs over rice. Everyone loved these! I was amazed at how popular this was. Quick, easy and everyone ate it. What's not to love? It's good to be home and I look forward to being back in the kitchen!

Hi there - thanks so much for reading! I looked at your blog and I'm so impressed with your cooking. Is your whole family vegan or are you doing this on your own? My daughters are about your age (one a year older and one a year younger). It is wonderful that at your age you are already connected to what you eat and where it comes from!

I'm the only one who is fully vegan, but my mom and one of my sisters are vegetarians. Everyone except for my dad eats my cooking though, so they eat vegan most of the time. My family (again, except for my dad, who's had a hard time coming to grips with it) is incredibly supportive of my diet, though.
