Black bean salad

Tonight I did some digging through the pantry and the fridge to come up with salad to go with our taquitos. Trader Joe's has a good soyrizo and potato taquito that doesn't have any dairy - they are awesome. I just don't have much time to cook this week so I'm take shortcuts wherever I can! I found some tomatoes and an avocado in the fridge and a can of black beans in the pantry. So a little of this and that and I had a side dish.

As we started eating, Ana tried the salad and said "this is good - is it a new recipe?" I replied "I didn't have a recipe - I just put some stuff together."

Hallie took one look at the salad and said "I could write a recipe for that - take everything I don't like, chop it and stir it up in a bowl."

So in honor of her I present the recipe for the Everything Hallie Doesn't Like Salad:

1 can black beans, drained and rinsed
1 avocado, diced small
1 cup halved grape tomatoes
2 T. lime juice
a little bit of fresh cilantro
handful of pepitas
salt, pepper and cayenne

The rest of us liked it :-)

I used to loooove those toquitos, but my TJ's doesn't have them anymore because they said they didn't sell well. Grrr...

Hi Teddy - I'm with you - I could eat that combination all the time. I love avocado in anything. Hallie has started eating avocado on a sandwich if she can't see it!

Bummer Julie - I have found that several of the TJ's around here don't carry them but the one that's actually in my town does. It makes for a nice easy dinner :-)

I just recently found your site and have really enjoyed looking around it. I love the food you make, especially all of the salads (like this one in fact!). Also, I tried your "drunken" beans recipe from an earlier post and they rocked!

Jessica! Thanks for the comment - really. I'm so glad you like what you've seen and that you tried the beans. We just love those and they couldn't be easier to make!

Hallie... that's very funny!!!

I love Trader Joes... the only thing is sometimes you get used to something you love and the next thing you know, it's gone from the shelves and oftentimes (as julie here writes) it's never again seen. Waaaaaaaah! I am so sad when that happens.

Hey Kleo - Hallie is a laugh a minute... I know what you mean about the TJs stuff, it's frustrating. I love their cranberry mustard but they only sell it around thanksgiving.
