Linguini with garlic cream sauce and roasted peppers and onions

Tonight's dinner was one of those where everyone was practically licking their dish clean :-) Nice visual eh?

I made a recipe from the Millenium cookbook for Garlic Cream Sauce. This sauce requires that you make the recipe for Millenium braised garlic (which is so simple). The sauce actually calls for 1 1/2 cups of the braised garlic so I used 6 heads of garlic instead of 4 (yes, SIX heads of garlic in one recipe!). I also roasted 2 yellow peppers, 1 red pepper and 1 onion in a very hot oven with some olive oil, salt and pepper. I tossed linguini with some (not all) the cream sauce and then added in the roasted vegetables. It was absolutely wonderful.



















I also made a simple salad of shredded raw zucchini tossed with some apple cider vinegar, olive oil, salt and pepper and 1/2 cup toasted sliced almonds - then sprinkled with some vegan parmesan. It was surprisingly good!




















We also had a watermelon I picked up at the product store this morning (along with a baguette).

Do you think I could sub out the white miso for something else? I just don't know what else I would use it for if I bought it.

Your salads always look so yummy--and I am NOT generally a salad eater!

How exactly did you roast the veggies? On a cookie sheet or something? In the broiler, or just a hot oven?

Hi Freedom - I guess since we all ate the same thing it's okay :-) But the garlic really wasn't overwhelming, believe it or not.

Hey Julie - I guess since it's just 2 tsp of miso you could just skip it and add some more salt. Let's be honest - the garlic is the star! I love salads - if I had a personal chef that's what I would live on. I try to move beyond green salads whenever I can.

Hi Shawn! The pasta was really quite wonderful. I put the veggies (tossed with olive oil) onto a foil covered shallow pan (jelly roll pan). I had it in my gas oven at about 500 for probably 45 minutes.

The more garlique, the better. "Cream" sauce... love, love, love the veganization...

Kleopatra - you really should try this if you like garlic. You would never guess it's not a dairy cream sauce - delicious and simple.
